Producing MALTISORB®-coated gum

Roquette is one of the foremost manufacturers of polyols, primarily sorbitol, maltitol, mannitol and xylitol, all of which are used in gum base or for coatings as they can withstand processing and maintain their taste during chewing.
However, MALTISORB®, the company's patented version of maltitol, is proving to be ideal for chewing gum coatings as it is crunchy and stable, simulating the mouthfeel of sugar. Maltitol is obtained by adding a hydrogen molecule to the disaccharide maltose molecule, taken from maize or wheat. MALTISORB® is a very pure crystalline maltitol.
The crunchiness is due to the fact that it has physico-chemical properties akin to that of sugar, due to its solubility and crystalline nature. It has low hygroscopicity, maintaining its crunchiness and stability regardless of environment and has a calorific value ranging from 2 to 2.4kcal/g. Yves Le Bot revealed that "MALTISORB® has the same molecular weight as sugar. Polyols are being used by all the leading companies".
He concluded by saying that "coated pellets are the next big seller. They now account for 33 per cent of the US market and sales have increased by between 10 and 15 per cent during the last year".
