  • MALTISORB® maltitol guarantees outstanding crunchiness from the first bite, thanks to its solubility and crystalline form.
  • Its very low hygroscopicity assures crunchiness over time whatever the packaging and climate conditions.
  • Crunchiness also depends on water activity in the centers. Roquette has developed well-balanced center recipes for increased shelf life.
  • As against those made with other polyols, maltitol-based centers do not require more gum base than those using sugar. This ensures significant cost savings, especially when expensive flavorings are involved.

Flavor impact & sweetness
  • Of all the polyols, MALTISORB® maltitol has the solubility curve closest to that of sugar, a key to flavor release and sweetness profile enhancement.
  • MALTISORB® maltitol offers good synergy with intense sweeteners such as sucralose, requiring a smaller dosage than polyols that are not as sweet.

  • MALTISORB® maltitol guarantees a very shiny appearance thanks to a perfectly smooth surface.
  • MALTISORB® makes it easy to smooth the surface during coating and still obtain a very good product, even in the case of an uneven surface or of poor start-up in the panning operation.

Timesaving
Timesaving is an important goal for the coating operation. To help optimize process performance, Roquette has developed a technique which makes it possible to pan within less than 3 hours compared to 4 hours for other polyols.
